Thumann's - The Deli Best sign
From the sandwich shop near the Persian Room. This was actually converted into a convention space during the 1997 renovation, although the kitchen remained. This is especially notable because the first menu item is a ham sandwich. The main kitchen was advertised as Kosher, although the sandwich shop area was not. Once as I ate such a ham sandwich there, and during a discussion with the server, he remarked that the main kitchen was "as kosher as that ham sandwich," without elaborating further.

I'm afraid your server was right. The Pines was "Kosher style," not truly kosher. For example, they had one hot serving line in the kitchen that they used to serve hot food for the (dairy) breakfast and lunch and for the (meat) dinner. They steam cleaned the floorboards every day, but not the rest of the kitchen.
