I don't know exactly what these are used for, but judging by the fire suppression nozzles above this, I'm guessing it's a deep fryer.

Those are called tilt skillets. You could cook of hundreds of pounds of meat in them. Then you tilted the skillets down to drain excess grease and water using the wheel to the right of the skillets.
Also could cook gallons of soup at a time, you name it.
