It says "SHUT"
When I glanced at this quickly, I thought it said "shit". Of course, it actually says "shut". Judging by its yellow color, I wondered if this was actually a natural gas line, but that doesn't make sense because virtually none of these hotels had natural gas service. The valve is marked "1957", which is probably around the same time the new boiler house was built, mainly to support the Jennie G building.

This is a fire valve indicator post, it would normally be located where the main water source enters into the fire suppression system (sprinklers, fire hoses, etc.)
I drive past the Grossinger weekly, commuting from NYC to Chautauqua, and after seeing your photographs I had to stop never realizing what a historic and interesting site I was driving past every time! Thank-You
